Keri Methi nu Athanu (Mango Fenugreek Pickle) is popular spicy mango pickle. It is easy to prepare and can store for long days. Mango Fenugreek pickle can serve with any dish like dal-rice, subzi-roti or gujarati thali.
Mango Fenugreek Pickle (Keri Methi nu Athanu)
- 500 gm Raw Mango
- 200 gm Fenugreek seeds (methi dana)
- 1 tsp Turmeric powder
- 2 tsp Salt
- 100 gm Achar masala (pickle masala)
- Oil according to requirement
Wash mango and cut into 1-2 inch pieces.
Mix turmeric powder and salt in it.
Mix well and remain it over night.
In between mix well mango and fenugreek.
Soak fenugreek seeds in water over night.
Then drain water from mango and fenugreek.
Now soak fenugreek in mango’s water.
Dry both separately.
Keep away from sun light.
Dry till it becomes moist free.
Heat 2 cup oil in a pan approx 3-4 minutes.
Cool down it.
Add mango, fenugreek and achar masala in mixing bowl.
Now add oil and mix properly.
Keep it in a air tied glass jar.
Store it in a refrigerator for long time.
