Bharwan Bhindi (Bharela Bhinda – Stuffed Okra) is simple, spicy and delicious okra recipe. In Gujarati, it also known as Sambhariya Bhindi also. Fresh Bhindi and stuffed tangy spices gives irresistible tastes.
I tried some variation in this recipes and made stuffing using gantiya. Gathiya is widely popular Gujarati snacks. Stuffing with gathiya gives new and delicious taste.

Ingredients
- 250 gm Bhinda (okra)
- Tomatoes for garnishing (fine chopped)
- 1 tbsp Gathiya (any) (coarsely)
- 2 tbsp Cumin- coriander powder
- 1 tbsp Fried rice flakes (powder)
- 1 tsp Ginger garlic paste
- ½ tsp Turmeric powder
- 3 tsp Red chili powder
- Salt to taste
- 2 tsp lemon juice
- 1 tbsp coriander leaves
- 1 tbsp oil
- 2 tbsp Oil
- 1 tsp Cumin seeds
- Pinch of Asafetida
For Stuffing
For Seasoning
Instructions
Cut both side end of okra and slit it in meddle. (long slit)
Mix all stuffing ingredients.
Fill stuffing into okra.
Heat oil in a pan at medium flame and add cumin seeds in it.
When it is spattering, add asafetida in it.
Now stir slowly and cook it at slow flame.
Cover lid and stir after sometime.
Cook till it become soft.
Garnish with tomatoes.
Serve with regular dish.
