Gujarati lunch or Dinner is not complete without any Athanu (आचार – Pickle). Lemon pickle is one of favorite Gujarati Pickle. In lemon pickle, pulp can use as sauces also and peel gives mildly tart flavor. Lemon pickle is also used as Ayurvedic cuisine. It is home remedies for stomach disorders.
Limbu nu Athanu – Lemon Pickle – Nimbu Ka Achar
Ingredients
- 500 gm Medium size fresh lemon
- 2 tbsp Turmeric powder
- 4 tbsp Salt
Instructions
Wash lemon and dry.
Cut lemon in 4 site but leave them attached to each other.
Mix turmeric powder and salt.
This mixture is used as stuffing.
Now fill this stuffing in lemon.
Cover it properly.
Store it in a glass jar.
Shake well after 6-7 days.
When it becomes very soft, now it is ready to serve.
Notes
Dry glass jar in sunlight, so it’s become moisture free. Moisture is not good for pickle storage.
