Vegetable Khichdi is popular and delicious version of Gujarati Khichdi. Khichdi is quick, easy to made and delicious comforting food. Vegetable khichdi made with rice, lentil, all kind of vegetables and Indian Spices. I always prefer to made veg khichdi, when I do not have enough time to prepare food. Veg khichdi is healthy and complete food. I love to have it with Kadhi or Curd. I added Paneer cubes(Optional) in khichdi also.
Vegetable Khichadi
Ingredients
- 1 cup Rice
- ½ cup Mung Dal
- ¼ cup Toor Dal
- 50 gm Potatoes
- 50 gm Onion
- 50 gm Tomatoes
- 50 gm Guvar (Cluster Beans)
- 50 gm Eggplants
- 50 gm Cauliflower
- 50 gm Green peas
- 50 gm Paneer (Coated Cheese) - (Optional)
- 2 tbsp Oil
- ¼ tbsp Mustard seeds
- ½ tbsp Chili paste
- ½ tbsp Ginger paste
- ½ tbsp Turmeric powder
- 1 tbspRed chili powder
- ¼ tbsp Garam masala
- Salt to taste
- 5 cup water
- 5-6 Curry leaves

Instructions
Mix rice, mung dal and toor dal. Wash it very well.
Soak mung dal, toor dal and rice for half an hour.
Drain water from it. Keep side.
Peel potato, onion and cut in to small pieces.
Cut all vegetables in to small pieces.
Heat oil in a cooker at medium flame.
Add mustard seeds and curry leaves in it.
When it is splutter, add onion, all vegetables, chili paste, ginger paste, turmeric powder, red chili powder, salt and garam masala.
Now add rice, mung dal, toor dal in it.
Stir it properly. Add water in it.
Lid the cover. Cook for 7-8 whistle.
Now Vegetable Khichdi is ready to serve.
Serve hot with curd, Kadhi or Lasan Kadhi .
Notes
You can add more water to make semi-solid khichadi.
